AUGUST 2004 BEER RECIPE

from Salut! The Quebec Microbrewery Beer Cookbook
Strawberry-Cherry Cream Soup
Serves 6

I especially enjoy surprising friends with this summer dessert soup. After they finished raving, you can let on that it was made with beer. Surprise surprise!

2 ample cups (500 mL plus) fresh strawberries
1 handful of cherries, 6 to 10, pitted
Juice of 2 oranges (about 7 tablespoons/105 mL)
1 cup (250 mL) 35% cream
½ cup (125 mL) sour cream
¼ teaspoon (1 mL) ground cinnamon
4 tablespoons (60 mL) Cheval Blanc Legendary Red
2 tablespoons (30 mL) Quelque Chose
2 tablespoons (30 mL) sugar, or to taste
4 strawberries, sliced thin for garnish

1. Purée the fruit and orange juice.

2. Blend in cream, cinnamon, beer and sugar.

3. Chill.

4. Garnish and serve.
